Mini-Chocolate Cake

Here's the deal: I'm sick and it's frustrating. Normally when you have a bad cold, you lose your sense of smell, as well as your taste buds apparently. To me, that's frustrating. So for whatever reason, my body decides it just wants sugar. Baked goods, candy, anything will do. I always love baking, but I don't like eating it so I give it away. When I'm sick, I want to eat it, but I don't want to bake it. Seriously? I can't wait this battle. However, this time I discovered a great way to make a reduced quantity cake. Basically a cake that will either make two servings for one person, or a cake for two people. It turned out great! Thought that I would share it. I'm sure it will come to good use.


- 1/4 cup + 2tblsp of AP-Flour
- 1/8 tsp of baking soda
- 1/8 tsp of salt
- 1/3 cup-o-sugar
- 2 tblsp of cocoa
- 3 tblsp of melted butter
- 1 egg
- 3 tblsp of milk
- 1/2 tsp of vanilla extract


- pre-heat the oven to 325
- mix together the flour, baking soda, salt, and cocoa
- in a separate cup, mix together the melted butter, the sugar, the egg, and the milk
- mix the two cups of ingredients together and add the vanilla
- put mixture into a small square pan, lined with parchment paper. Don't be nervous by how thin it looks - it is supposed to look that way
- bake for 20-30 minutes, using the toothpick test to see if it's finished
- after your cake has cooled, cut the edges off and cut the cake the in half
- use whatever icing you'd like, layer the cakes, and ice
